Chili 1207



Rain day is a good day for chili.
On those rare days when we get "weather," a bit of capsicum helps.
More chili for tomorrow.

Ingredients
  • 2 ancho chilies
  • 1 chipotle chili
  • 1 T chili powder
  • 1 T smoked Spanish paprika
  • 2 lbs stew beef
  • 1 can tomato paste
  • 1 t sea salt
  • 5 roasted garlic cloves
  • 1 bottle Anchor Porter

How
  1. Combine all ingredients except chili powder, paprika, and tomato paste in slow cooker.
  2. Cook on high until beef is tender (about five hours).
  3. At hour three, add chili powder.
  4. With one hour to go, add paprika.
  5. Remove beef from slow cooker.
  6. Transfer liquid and chilies into a sauce pan, blend with immersion blender, add tomato paste, and simmer to reduce by one third.
  7. Shred beef, combine with sauce, and enjoy.

Makes 5 servings.

What I'd Change
  • Add cumin.
  • Add some animal fat.
  • Maybe a bit more salt.
