Hot Chocolate v0117-2010

3 oz Scharffen Berger 62% Semisweet Chocolate

How

Heat heavy cream to just before the boil.
Add spice and vanilla.
Simmer to blend flavors.
Chop chocolate bar to meltable bits, add to the cream mixture, and whisk while melting chocolate.
Enjoy immediately. I know I did.

Monday's Food was a tasty, though odd, smattering

My Favorite Mountain Breakfast

This morning I enjoyed my favorite mountain breakfast: the Country Combo from Cedar Glen Inn. It is a mixture of potato, egg, bacon, sausage, and other stuff, topped with cheese and accompanied by grave. It's likely not healthy, but twice a year or so, it's what's for breakfast.

If you're ever in the area and decide to have it, get the half plate; it's plenty (in fact, I take a box to enjoy at a another meal).

Contrary to Detractors, Primal Supplies Vitamin B Complex

Some commenters on a Washington Post article, Paleolithic diet is so easy, cavemen actually did it, claim primal/paleo folks will have a hard time getting B vitamins...don't think so. Here's a short list of non-grain/legume sources.

B1 (thiamin): red meat, egg yolks, green leafy vegetables, berries, and yeast
B2 (riboflavin): milk, meat, eggs, and cheese
B3 (Niacin): meats, fish, brewer's yeast, milk, and eggs
B6 (pyridoxine): liver, meat, fish, and butter

Off the Cuff Chili

Having three Italian sausages and a bag of homegrown bell peppers, I ransacked the cupboards and threw this together. 'Twas good, but could have used some onions.

1 bag Il Fornaio mixed beans and barley
1 t Cayenne pepper powder
1/2 t Sage
1/4 t Cinnamon
1/2 t Garlic powder
4 Bell peppers, cut in strips
3 Hot Italian sausages
1 T coconut oil
Water

How

Soak bean and barley mix by covering with water, bringing to boil for 3 minutes, and then soak for 2 hours. Drain liquid and rinse thoroughly.
Cook beans and barley until just tender.
Brown sausages large pot and remove from pot.
Add sliced bell pepper to pot and saute, adding a bit of water to deglaze the pot.
Add all spices and herbs to pot and stir into peppers. (Take care not to burn this as it makes a most noxious smoke...which I discovered most unfortunately.)
Slice sausages into one inch lengths and return to pot.
Allow sausages and peppers to marry a bit.
Add bean and barley mixture to the pot and simmer until all ingredients combine.
Season to taste.
