- Pickles: Carrots pickled in currant reduction with cocoa powder. FEEDBACK: The sauce was good, but I should have salted and/or par-boiled the carrots.
- Fruit Toss: apples chopped to one-half inch chunks, currants rehydrated vanilla water; tossed in powdered oregano, cumin, cinnamon, smoked paprika, chipotle, and cocoa. FEEDBACK: good, but needed more spice.
- Vege and Protein: Extra firm tofu, fried to crispy and chopped in 1/4 inch chunks; cauliflower dusted with smoked paprika and tossed in a bit of olive oil, baked until just done; cottage cheese; hard Irish cheese, grated; all mixed with powdered oregano, cumin, cinnamon, smoked paprika, chipotle, and cocoa. FEEDBACK: the tofu was a good idea--and was good fresh--but it became a bit like crumpled paper in texture; the cheeses were WAY too much.
- Beverage: cocoa and chili in water. FEEDBACK: did not do this...maybe later.
