CENTERED ON CELERY ROOT, CUCUMBER, AND MANGO

I've set aside formal foodpairing for now and have gone back to wandering through the produce aisle, looking for what looks good.

  • Vegetables: celery root, winter squash, and green beans (all steamed individually); multi-colored cherry tomatoes; all in a reduction of celery tops with allspice, juniper berry, and black, red, and white pepper corns
  • Pickles: Persian cucumbers, shallot (fine dice), and thinly slice tomato in reduced honey, water, lime juice, lime zest, and jalapeno (fine dice)
  • Fruit: frozen mango, syrup made from candied ginger
  • Bread: cornbread mix made with egg white, cooked in sauteed garlic, jalapeno, and tomato in a cast iron pan in the oven
