Ingredients
- 2 ancho chilies
- 1 chipotle chili
- 1 T chili powder
- 1 T smoked Spanish paprika
- 2 lbs stew beef
- 1 can tomato paste
- 1 t sea salt
- 5 roasted garlic cloves
- 1 bottle Anchor Porter
How
- Combine all ingredients except chili powder, paprika, and tomato paste in slow cooker.
- Cook on high until beef is tender (about five hours).
- At hour three, add chili powder.
- With one hour to go, add paprika.
- Remove beef from slow cooker.
- Transfer liquid and chilies into a sauce pan, blend with immersion blender, add tomato paste, and simmer to reduce by one third.
- Shred beef, combine with sauce, and enjoy.
Makes 5 servings.
What I'd Change
- Add cumin.
- Add some animal fat.
- Maybe a bit more salt.
